Yellow-Tomato Basil Lemon Jam
"Life-changing" is how I describe Tim's latest recipe for Yellow-Tomato Basil Lemon Jam. I was excited to try this recipe because we get yellow tomatoes from our favorite vendor, Fruitful Vines in Sullivan, Illinois. I wasn't sure about the basil, but I understood the lemon part. My first word was, "Wow!" This stuff is amazing! The yellow tomatoes give such a lovely flavor after sitting in sugar to release their juices. Once it boils gently for 40 mins, add basil and lemon zest, and the flavor is surprising, bright, lovely, and prominent. It is not a light flavor like our Dandelion Jelly. It is bold and delicious!
