Watermelon Jelly is made from the juice of a pureed watermelon. Out of this watermelon, we got 4 cups of juice strained from 8 cups of puree (yielding 4 cups of each = perfect for one batch of jelly and one batch of jam!) The juice takes longer to strain and the jelly is higher maintenance on the stove, hence the higher price. Jelly is harder to make than jam.
